Ginger and Spiced Almond Salmon

It is so easy to create a healthy gourmet meal at home with just a few ingredients!


This has to be one of my favourite Salmon meals yet. With the warmth of ginger and the nutritional benefits of salmon, you will continue to return to this recipe again and again!



Serves: 4


Ingredients


Ginger Sauce/ Marinade

1 tsp minced/ grated fresh ginger

1 garlic clove (or ½ tsp minced garlic)

2 full spring onions

3 sprigs coriander, stems and leaves

1 ½ tbsp lemon juice

3 tbsp Tamari sauce

1 tbsp honey


Steamed Salmon

4 boneless Salmon fillets

½ fresh lemon (sliced)

Sea salt and black pepper to taste


Spicy almonds

70g slithered almonds

½ tsp Chinese 5 spice

1 tbsp avocado oil (or olive oil)


Instructions


Ginger Sauce

1. Grate ginger and chop finely garlic, spring onion and coriander. Place into a small bowl

2. Add lemon juice, tamari sauce and honey. Combine well and set aside


Steamed Salmon

3. Add water to a pot with fresh lemon slices and bring to the boil (with lid on)

4. Spritz steamer bowl with olive oil spray to ensure easy release of salmon once cooked

5. Turn boiled water down to a simmer

6. Insert the steamer and add salmon fillets. Brush salmon with some of the ginger sauce and sprinkle with ground salt and pepper to taste

7. Place lid back on and cook for 5-6 minutes or until salmon is cooked through


Spiced Almonds

8. While the salmon is steaming, in a small fry pan bring to a medium heat and add oil, almonds and Chinese 5 spice. Saute for 5 minutes or so until the almonds become a caramel like brown colour. Drain onto a paper towel and set aside


Serve salmon on a bed of steamed green vegetables and top with ginger sauce and spiced almonds. Garnish with lemon and fresh coriander. Sea salt and pepper to taste.
